Strength is a stat that allows you to physically "push" players/npc's by placing your empty hands on their shoulders (they get pushed 2 feet for every point you have i strength). Everyone naturally has 0 strength with the exception of a few advanced races, and some races such as Einher or orcs can purchase strength bonuses as part of their racial advantages.
Outside of race, there are only a few common ways you often see bonuses applied to the stat, such as spells or rare items like "bracers of strength," these you'll have to find in game and will often only be temporary improvements. The other common way to get a permanent strength bonus without playing a certain race is to purchase ranks in blacksmithing, as there are certain thresholds of that skill (level 6 and 10 I believe) where you get a +1 bonus each.
